Slap Ya Mama Cajun BBQ Shrimp, Garlicky Green Beans SYM-Style and Purple Roquefort Slaw

Slap Yo Mama Cajun BBQ Shrimp
by Matt Baird

2 pounds raw shrimp (Use whatever your favorite kinda shrimps are, I prefer head on, unpeeled.)
1/2 cup worcestershire sauce
2 Tablespoons lime juice
1 teaspoon black pepper
6 or 8 cloves garlic, chopped
1 stick unsalted butter
1/4 cup olive oil
3 glugs white wine (I used chardonnay.)
1 lime sliced

Melt butter in saute pan. Add olive oil and garlic. Cook till garlic is soft, but not browned. Add everything else (except shrimp), and let simmer. Add shrimp, I prefer to cook them in the shell, cook for 2 minutes on one side. Flip 'em and cook for another 2 minutes. Serve in a deep bowl with some good bread to sop up the sauce.

Garlicky Green Beans SYM Style
by Matt Baird

1 pound fresh green beans
1 head of garlic (that's right 1 whole head!), chopped
1/2 stick unsalted butter
3 Tablespoons olive oil

Steam green beans to whatever degree of doneness you prefer. I like mine a little crunchy. While beans are steaming, melt the butter in a skillet. Add olive oil, garlic and seasoning.Saute garlic until it's just barely getting some color, then add steamed green beans. Mix well and serve.

Follow the recipe as directed. Substitute the salt and pepper for 1 teaspoon of Slap Ya Mama.

OK...here's the Purple Roquefort Slaw story, for all my adoring fans....hahaha. When I got the SYM seasoning in the mail, and heard about the SYM challenge, I thought long and hard about what to make.Cajun BBQ shrimp is one of my favorite meals, so I figured that would be a good starting point. And,I knew it would be loaded with butter and some olive oil, so I needed to come up with a couplea "healthy" sides! My garlicky green beans are always a favorite, and, they were on sale for 99 cents a pound, so that choice was really easy! I just swapped out S&P for the same amount of SYM seasoning. Now,all I hadda do was come up with another "healthy" side. As it so happened, just the week before, a really, really, good friend sent me a cookbook, as a thank you for me sending her some Star Anise! It's so awesome having CIBO friends to share things with. My friend, not kowing that I freakin' love cookbooks, totally made my day, when I went to the post office and found a suprise cookbook waitin' for me there!I Sat down and read the book from cover to cover, as I do with all my cookbooks! OK, by now I can hear you all sayin' to yourselves "Just stop the damn blabberin',and get to the friggin' point"! Point is, I found my other side dish in said cookbook.  The Cowgirl Chef, page 163. Purple Roquefort Slaw! I mean, anything with Roquefort in it's gotta be good, right? Again as with my other dishes, all I did was swap out the S&P for a teaspoon each of the SYM seasoning! And it turned out awesome, if I do say so myself! Thanks again, my friend for the great cookbook!
