Sciabica Chicken and Shrimp Pasta

I was having a hard time thinking of what to cook with these amazing oils, so I asked around and heard some great ideas.  Of course, I did not use any of them because I am hard headed.  I decided to try a recipe that I have cooked many times, but I never cooked this dish with these oils.  So, I gave it a shot.  Allow time for marinating, because you will need to marinate the chicken for 2 hours.  


Sciabica Chicken and Shrimp Pasta

For the chicken marinade:
1 Tablespoon of garlic powder
1 Tablespoon of salt
1 teaspoon black pepper
1 teaspoon red pepper

You will also need the following:
1 pound of boneless skinless chicken breast, cut into strips
1 pound of peeled shrimp
1/2 pound of Teet’s Smoked Pure Pork Sausage, cut into coins
1/2 yellow onion, diced
1 bag of penne pasta
8 ounces of chicken broth

Mix all of the marinade seasonings together in a bowl.  Cut chicken breast into strips, place into a container, and rub seasoning into the chicken breast.  Then pour 4 Tablespoons of Sciabica's Jalapeno Extra Virgin Olive Oil over the chicken and rub it in.  Place container into the refrigerator for at least 2 hours (in this recipe I actually marinated it for 2 1/2 hours).

Once chicken is marinated, coat bottom of a medium skillet with 2 Tablespoons of Sciabica's Jalapeno Extra Virgin Olive Oil  and saute chicken breast on medium heat until golden brown.  Remove chicken from skillet.  Add diced onions and sausage into skillet and brown until onions are translucent. 

At this time, cook pasta according to bag directions.  Add 1 Tablespoon of Sciabica's Sevillano Variety Fall Harvest Extra Virgin Olive Oil to water, then boil pasta.  After pasta is finished, add 1 Tablespoon of Sciabica's Sevillano Variety Fall Harvest and stir up the pasta well.

After you have browned all of the meat, season the shrimp with:
2 teaspoons of salt
1 teaspoon of red pepper
1/2 teaspoon of black pepper

Place seasoned shrimp and 1 Tablespoon of Sciabica's Sevillano Variety Fall Harvest Extra Virgin Olive Oil into the skillet, and cook them for 3 minutes on each side on a medium high heat.  After cooked, add the chicken broth and other meats back into the skillet and cook for 5 minutes.

Once sauce is finished, dish out pasta and meats onto your plate and enjoy.  Also, you can add anything else to this dish and it will be superb.  I forgot to add some final touches on my dish before I took the picture because I was really hungry and couldn't wait!
