1 Tablespoon flour
1 1/2 Tablespoons packed dark brown sugar
1/4 teaspoon cinnamon
1/4 teaspoon cardamom
1 15-ounce can diced peaches, drained (or use frozen peaches, thawed and diced)

Canola or vegetable oil, for frying
Powdered sugar or honey (optional, for garnish)
1. Lay out about 35 wonton wrappers on a large baking sheet or clean work space.
2. In a small bowl, combine the flour, brown sugar, cinnamon and cardamom. Toss the peaches with this mixture.
3. Place about a tablespoon of the peaches onto the middle of each wonton square.
4. Working one at a time, wet the edges of the wonton wrapper with a little water on your finger.
5. Fold one corner up and onto the the opposite corner (it will look like a triangle). Press to seal edges. Add another dab of water onto the bottom corners of the triangle, then fold into each other so that they meet in the middle. Gently press to seal together. Continue to do this for each wonton.
6. Add oil to a deep skillet, enough to fill about 1 inch, and heat over medium.
7. Carefully slide the wontons, one at a time, into the oil and fry, turning over, until golden brown on each side.
8. Remove from oil onto paper towels and let cool slightly. You may sprinkle with powdered sugar and drizzle with honey, if desired.
