Now, everything in moderation is key, right? I can’t sit here and tell you that I will never drink a Dr. Pepper, or that I won’t ever allow my kids to have a Twinkie. I mean, now that Twinkies are back…anyways. I was beyond ecstatic when I heard about Tropical Traditions challenge. I have heard from so many of my friends who have switched to different flours in their baking/cooking and had successes with it. I knew I wanted to get on the bandwagon of trying out how to make great food with coconut flour. With this being an alternative for a healthier way to make a sweet treat, I knew I wanted to make a dessert that my family would love and not feel like they were on a diet. We don’t do diets. Who doesn't love donuts? They are one of life’s greatest pleasures, right? We think so, too. The raspberry sauce is also a healthy alternative, made with fresh raspberries and Tropical Traditions Organic Coconut Flour and Coconut Cream Concentrate.
Vanilla Coconut Donuts with a Raspberry Sauce

Donuts:
1/2 cup of Tropical Traditions Organic Coconut Flour
1/4 teaspoon of sea salt
1/4 teaspoon of baking soda
6 eggs
1/2 cup of honey (or other liquid sweetener)
1 Tablespoon of vanilla
1/2 cup of unsalted butter, melted (coconut oil, or regular oil will work as well)
A dash of powdered sugar
Raspberry Sauce:
1/2 cup of Tropical Traditions Organic Coconut Flour
1/4 teaspoon of sea salt
1/4 teaspoon of baking soda
6 eggs
1/2 cup of honey (or other liquid sweetener)
1 Tablespoon of vanilla
1/2 cup of unsalted butter, melted (coconut oil, or regular oil will work as well)
A dash of powdered sugar
Raspberry Sauce:
1 Tablespoon of honey
1 pint of fresh raspberries
1 Tablespoon of Tropical Traditions Coconut Cream Concentrate
Preheat oven to 350°F. Blend all the dry ingredients together in a bowl. Using a whisk or mixer on a low setting, blend in all the wet ingredients into the dry ingredients. Fill donut pan about 2/3 of the way full with batter. Bake for about 20 minutes, or until a toothpick comes out clean.
While your donuts are baking, pour the honey, raspberries and coconut cream into a small sauce pan. Smash continually until your raspberries boil. Turn the burner off and let cool slightly.
Once your donuts are done, pour a spoonful of sauce over your donuts and sprinkle with a dash of powdered sugar.
