3 slices Texas Toast, lightly toasted
12 ounces thinly sliced smoked turkey breast from the deli
1 large very ripe tomato, thinly sliced
6 slices bacon, cooked
3 Tablespoons unsalted butter
2 Tablespoons all-purpose flour
1 Tablespoon Kary's Dry Roux
1 1/2 cups milk, half and half, or heavy cream (I used 2% milk)
8 ounces sharp cheddar cheese, shredded
Salt and pepper to taste
Parmesan or Romano cheese, shredded
Ovenproof pans or dishes
Melt the butter over medium heat in a 2-quart saucepan. Add the flour,whisking constantly for 5 minutes. Add the roux, still whisking. Add the milk and turn the heat up to medium-high, whisking until milk is thickened. Remove from heat and add the cheddar cheese. Stir until all of the cheese is melted, add salt and pepper to taste and set sauce aside. Place one slice of Texas toast in an ovenproof dish, layer 4 ounces of sliced turkey on the toast, add a slice or 2 of the tomato, then liberally cover with the cheese sauce. Sprinkle some Parmesan or Romano cheese over the sauce, and broil about 4 inches from the broiler until bubbly and starting to brown. Lay 2 pieces of bacon on top and serve.
