This is a variation of Shrimp Scampi. This is great for a weeknight, it comes together quickly and it is easily scaled up or down for the number of people.
Shrimp and Pastaby Sharyl
serves 2
1 cup of penne pasta
2 Tablespoons of butter
1 Tablespoon of olive oil
1 teaspoon Kary's Dry Roux
2 garlic cloves, minced
Salt to taste

12 - 16 large shrimp (deveined)
1/4 cup of white wine
Cajun seasoning
Cook the pasta per directions on package and drain.

Cook the pasta per directions on package and drain.
While pasta is cooking, heat skillet over medium heat. Add the butter, olive oil, dry roux, garlic clove and a dash of salt to the skillet. When pasta is ready, add the shrimp to the skillet and cook for 3 - 4 minutes, until rosy pink. Do not overcook or they will become tough. As soon as the shrimp are cooked, add 1/4 cup of white wine and sauté for another minute or so. Pour over pasta and serve. If you like it spicy like I do, sprinkle Cajun seasoning over the dish. Serve with a salad and dinner is ready!
